Supreme Pizza Spaghetti Bake {paleo, grain-free, dairy-free, gluten-free, whole30 compliant}

Spaghetti squash is a wonderful vehicle for a paleo casserole dish! A quick google search will reveal hundreds of different ways to make the squash into a casserole, but I am partial to my Supreme Pizza Spaghetti Bake. I love that the spaghetti squash is crisp and not mushy, and I especially love that the entire dish is completely gluten-free, grain-free, and dairy-free! It is perfect for those on Whole 30 challenges, as it is compliant and leaves you feeling satisfied!

There are a couple secrets to making sure the casserole doesn't turn out mushy, and I cover how to make sure that doesn't happen to you in the recipe. I also posted this helpful "recipe" on my instagram yesterday, to help you know how to roast spaghetti squash "al dente." It will have a light bite to it, more like the noodles you used to enjoy, and will also add less water to your casserole.

The main take aways are: you need to roast your spaghetti squash no lower than 400F, you need to give it less time than you probably have been giving it (I start checking at 20 mins for a medium squash), and you also need to flip your squash over as soon as it is out of the oven. You need to let that steam release, rather than continue to cook the squash outside of the oven.

This method will give you perfect "noodles" for the supreme pizza casserole! I love this casserole so much because all of the flavors are reminiscent of pizza, and each scoop of casserole feels so satisfying and nourishing, except you don't have that heavy gut like traditional pizza or cheesy casseroles give!

I hope you love it just as much as I do!
