Black Forest Brownies with Coconut Whip Cream {grain-free, nut-free, dairy-free}

I am so lucky that Otto's Naturals sent me their new brownie mix! I've baked with grain-free brownie mixes before, and they were good and all but they weren't that classic, crinkle top, crispy outside and fudgy inside experience that we all have grown to love. It is hard to achieve that texture with grain-free flours. However, ONCE AGAIN, the fine folks at Otto's show us the super powers of the cassava flour. It mimics, so closely, the effects of an all-purpose baking flour which leaves us wondering if we accidentally baked up a traditional brownie mix! These are so delightful and will help families with allergies enjoy a classic treat!
While these are fantastic on their own, I wanted to try and make them into something extra special. We are huge black forest fans here, so the idea to make this into a black forest brownie was born! So easy thanks to the brownie mix! All you have to do is simmer up a quick cherry filling (easier than it sounds!) and I've included a coconut whip cream recipe but feel free to top with the whipped topping of your choice!
Once you mix up the brownie mix, you will put it in the pan as recommended on the package. Then, you'll spoon in your cherry pie filling and cut it in with a butter knife like this:

Just like those old marble cake mixes from our youth! But much better! Ok, those were yummy too.
