Quick and Easy: Shrimp Fried Cauliflower Rice

Do you remember when the only delivery food available to us was pizza or Chinese food? How did it take any other type of food this long to hop on the delivery train? I suppose consumers have changed. If I can't get something delivered in 2 days, I start to lose interest. What wild times.


Anyway, you can ABSOLUTELY make this faster than Postmates/Uber Eats/Door Dash could get Chinese food to you. In fact, this is my favorite meal that I like to make in a hurry. I swap out the proteins all the time, chicken is great, shrimp is great, even just veggie fried cauliflower rice! So. Dang. Good. It gives you a little bit of that classic and craveable Chinese food take out flavor.


I like to use frozen veggies for this: frozen cauliflower rice (which I buy at Costco, but you can get anywhere!), frozen peas. Usually I will use fresh carrots, celery, onion, and garlic because I always have those on hand but, I've seen a frozen mire poix mix (carrots, onion, celery) that I've used before and it was super handy! Other than that, this is just eggs, your meat of choice, coconut aminos and some garlic powder and onion powder. I like adding some fish sauce too. Red boat fish sauce is life.
