Pizza Spice Brazilian Cheese Bread [ Pão de Queijo ] grain-free, gluten-free, dairy-free options!

I LOVE cheese bread! They used to sell the frozen dough at Costco, that you'd just bake in your oven whenever you needed a cheese bread fix, but they no longer sell it! So I had to get creative. I once tried a store-bought cheese bread that was Pizza flavored, so I knew I needed to add my Pizza blend spices to my own recipe! I just posted a video to my instagram on how to make my pizza seasoning, so go check it out here! I've also included the written recipe below.


I made this cheese bread two ways: one with cow's milk and cheese, and the other with coconut milk and absolutely NO cheese (totally dairy-free). And both were great! Honestly, the tapioca starch is what makes this bread stretchy not the cheese! With the pizza spice flavors you don't really notice that there's no cheese in it. You're left with a stretchy bread flavored like pizza, and honestly that's pretty dang awesome as is. However, if you're not dairy-free, I would HIGHLY recommend adding the 1/2 cup of parmesan cheese as it adds a lot of flavor. And definitely use cow's milk if you're doing cheese. It makes for a softer bread.


My number one tip for this recipe: USE A SILICONE mini muffin tray. The aluminum mini muffin pans are great at making a crispy exterior, but they make this TOO crispy. We want just a lightly crispy exterior, not a crust. Silicone is where it's at to achieve that texture.


These are incredibly easy to mix up, not much magic beyond absolutely making sure your eggs are room temperature. When an egg is at room temperature, they have much more rising power and will allow our little breads to do that magic, "pouf!"
