Paleo Strawberry Cream Muffins {Paleo, Nut-Free option, Low sugar}

My absolute favorite pastries have a combination of fresh strawberries and sweet cream cheese. Something about that tart/sweet/creamy combination on a flakey pastry sets my heart ablaze! I wanted to recreate the same flavors in a paleo muffin, as well as keep in nut-free since I know so many of you suffer nut allergies. As an important note, the cream topping is a cashew cream here, but it is totally optional and you can even swap it out for something like a sweetened cream cheese, or a sweet glaze after baking is complete.


I used my beloved Otto's cassava flour for this and, I have to say, it feels so much better for us than a nut based muffin. Don't get me wrong, I love using almond flour for nutrients and healthy fats, but too much of it and my gut feels off.


You can swap the coconut milk in this recipe with almond milk, and the batter will be less thick. It will still work! But, if you're using coconut milk you might notice the batter is quite thick.


These will go FAST! Perfect for a slow weekend breakfast with some coffee!
