My cousins and I used to beg and beg and beg my Nana to make fudge with us. She always would make whatever we wanted to try, but I remember fudge being a recipe that we needed to wait for. I think she needed to get some ingredients she was missing, or maybe she wanted a break from young kids gathered around a hot stove and boiling liquids! Old-fashioned fudge is such a treat. It is quite rich with all the dairy, however. It definitely makes me feel a little sick when I eat it now, and it is just totally out of the question for Brant. There is a way to get that old fudge fix though! The magic of coconut oil shines again with this paleo fridge fudge!

I simply mix melted coconut oil with honey, cacao powder, vanilla paste (or vanilla bean) and some time setting in the fridge. A great way to get some healthy fats in your diet, and a better option to some of the other fudges and chocolates out there. I don't even feel bad about giving this to my kids. Due to the darker chocolate flavor and higher fat content, this fudge is pretty self-limiting. You feel satisfied rather quickly.

This might even make a delicious Easter treat! I bet you could cut out some shapes after it all sets in the fridge.
