Paleo Banana Walnut Loaf

Banana bread is one of those amazing kitchen staples, not only does it happily use up bananas that are no longer good to eat alone, but it becomes a perfect snack or breakfast item! I like paleo banana loaves, because most banana breads have turned into desserts under the guise of a healthy snack. If we just perform some of my typical recipe nips and tucks, we can truly eat banana bread for breakfast and feel good about it!


Walnuts are a super food- they contain plentiful omega 3 fats, polyphenols, and antioxidants. The benefits of walnuts extend from everything from decreased effects of aging, gut health, sperm health, anti-inflammatory properties, and weight control, to reducing the risk of certain cancers! Walnuts are so widely available to us, I like to try to add them wherever possible. And is there a better pair than walnuts and bananas?!


I ran out of vanilla at home, so this loaf doesn't have vanilla, but if you happen to have some on hand I think adding 1 teaspoon of vanilla extract would enhance these even more! However, I really like it as is. It's mildly sweet and very filling! It's a perfectly balanced snack. It couldn't be easier to mix up, a very typical dry ingredients stirred into wet ingredients recipe!
