Paleo Angel Food Cake with Blackberry Basil Compote

Angel food cake holds a special place in my heart. My mom used to make it for us on our birthdays growing up. It was so great with some whipped cream, and sometimes she'd add sprinkles to the batter. I haven't been able to find a good Paleo version of this cake before. I've tried a couple times, and it always turns out as a weird cake! But, this time, I thought about using cassava flour and altering a very basic angel food cake recipe to work for Paleo.
The cassava flour was an easy swap, because I knew my Otto's Naturals Cassava flour would swap nicely 1:1. The sugar is always a tricky part, but I thought I'd try sifting some maple sugar and seeing what happened. Luckily for me, the cassava flour and maple sugar sifted perfectly and I was in business!
One note: The maple sugar sifts very well, but some of the larger syrup crystals don't make it through. This is ok, simply be sure to measure what comes out of your sifter to match what you need for the flour and sugar mixture. I used the chunkier bits of maple sugar for the 1/2 cup of sugar that you beat into the egg whites.
Definitely don't skimp out on the sifting! Normally, I'm a sifting skimper. But, for angel food cake you need everything to be light and have lots of air. Please sift!
