Minestrone Soup with Pesto

How cold has it been where you are?! Most of my friends and family are all spread out, but it seems we've all been experiencing this extreme cold. I've been getting through by hibernating with my kiddos and making lots of comforting soups.
I tested out a creamy chicken noodle soup yesterday, and it was so sad. The noodles kind of disintegrated due to my own error. It was a cassava orzo noodle, so tiny like rice, and I way over did it in the instant pot. So, that one is back to the drawing board!
Luckily this one worked out. It is super easy, cooks only for 3 minutes in the InstantPot. It takes about 15-20 minutes to get to pressure. So definitely a 30 minute meal! The other ingredients are kind of throw together style.
You can use a homemade pesto, which is just so easy to whip up I have a make your own pesto from a kid's activity post but, you can buy a store made pesto quite easily. I just used some frozen pesto I had stashed in my freezer from my last batch.
You can also use any type of noodle that you want, the cooking time is the same. I used Jovial brand cassava elbows here to be grain-free.
