Instant Pot White Chicken Chili {grain-free, dairy-free, gluten-free}

Heyo!
It's been super cold here in the mornings, so I've been inspired to make more soups, stews, and slowly roasted meats! Which is fantastic, because all of those things are great in slow cookers or instant pots... meaning: way more time for fun stuff! And even luckier for us Denver folks, the sun comes out and shines all day which makes it a bit warmer and easy to get out and hike and play.
I love White Chicken Chili. In fact, when I was away for school it was one of the ready made soups at my local grocery store that I'd often grab a bowl of! Again, Texas has apparently made quite the mark on my foodie soul! However, it often is made with lots of dairy and grains to thicken. Which doesn't make me feel that great and is quite the opposite of my desires when I turn to a bowl of nourishing soup. So, I made it better!
This soup includes way more vegetables than you can tell- not that I'm trying to hide them! Cauliflower if a FANTASTIC soup thickener, if you don't want to use any dairy or dairy alternatives. It also boosts the nutrition, and often isn't noticeable in flavor at all. It is also completely done in the InstantPot- No precoooking anything, you're only going to dirty your InstantPot here and a blender.
This also uses my taco seasoning blend, which my family loves, but feel free to use whichever you prefer! Just keep in mind the spice. Sweet Norah gobbled up a whole bowl of this White Chicken Chili, and then let out the saddest cry that her mouth felt too spicy. MOM FAIL, but also a mom win because she ate such nutritious food amiright?
