Instant Pot Pulled Chicken Sandwiches and Microgreens Slaw {dairy-free, grain-free, gluten-free}

We had a super unexpected day off from school today, due to a power outage in the area! This recipe was kind of thrown together to make everyone a nice lunch, using what groceries we had left after the week. I've been more intentional about finishing off all of our perishables before going to the store again because, despite my best intentions, I get distracted by the new ingredients and forget about sad cabbage at the back of my fridge. So, this new rule of totally clearing out the fridge first has been great at reducing waste and keeping our fridge clean. When it's totally bare it is easier to wipe out ;)


I love that the chicken is made in the Instant Pot, making things nice and easy! You may also use whatever buns you'd like. I like these ones here as a grain-free, dairy-free, gluten-free, and nut-free option, but a hearty Kaiser roll would be divine as well. The slaw is really an, "everything but the kitchen sink" type deal! I used what I had in my fridge that needed using up, and it all tasted delicious together! There are tons of nutrition in microgreens, apparently sometimes even 20x more potent than the vegetable itself, so I have been trying to work those into salads whenever possible. It really doesn't change the taste, looks gorgeous, and provides varied nutrition! Win-win-win!
