Instant Pot Bison Chili with Sweet Potatoes {paleo, dairy-free, gluten-free, grain-free}

Today we are talking about those perfect meals. The type that come together easily, with little effort, and simmer away while you clean up your kitchen. Is anything better than sitting down to eat in a PERFECTLY clean kitchen? Is my Virgo showing?


I love Instant Pot meals like this Bison Chili with Sweet potatoes, because it packs a nutritional punch and makes my life so much easier. It cooks for 35 minutes while I close down the kitchen and main living areas for the night, and then tastes even better the next day for lunch.


We've talked about how important a nutritious lunch is, right? If I don't have something nutritious and filling waiting for me in the fridge, I just drink a coffee and get aggressive the rest of the day because cooking a lunch while hungry and on the spot is super difficult... I usually just skip it and pay for it later!


I also love that we're using bison here. A lean protein, not used as often as beef, adding variety to our food intake and also introducing new sources of protein to the littlest members of our family. It's even better too because in this chili it tastes just like beef. Sometimes, bison can add a gamey flavor that isn't palatable to everyone. I like mixing up my Bolognese sauces and my chilis by swapping out the ground meat whenever possible. Try some bison! However, if you can't access the bison meat a ground meat of your choice would work just as well!


OH! I almost forgot. If you watched me on instagram yesterday, you will know that I accidentally grabbed some diced tomatoes that had corn starch in them. Which means that our family wouldn't be able to eat them. But, I put my thinking cap on and used a mixture of bone broth and tomato paste instead. I LOVE this combination because it provides a thick, tomato consistency that is associated with chili but adds in the health benefits of tomato paste. In case you didn't know, tomato paste is cooked tomatoes that are then strained. This process creates extra lycopene, an antioxidant known for its protective effect against some forms of cancer and also promoting skin health. Tomato paste is used frequently in Mediterranean cuisine, but we can add it almost anywhere. Tomato paste is the good kind of "processed" food, processed in the sense that it was cooked, strained, and canned... not processed as in junk food!
