Cuban Inspired Mojo Shredded Chicken- Cook once, make three meals! {paleo, dairy-free, gluten-free}

Let's batch cook some shredded chicken, whisk up a quick mojo sauce and have 3 easy meals ready to rock throughout the week! This is my favorite style of meal prep and inspires me to think more like this in the kitchen: make more of a protein than you need for a single meal, and use it as many ways as you can throughout the week with whatever else you have lying around! It let's me feel "free" with my food, anytime I plan to a tee, I feel restricted or obsessive about meal times and it just doesn't feel good! But, there's something to be said about failing to plan when it comes to food and nourishment. This is my happy medium!
Shredded mojo chicken tacos with fried plantains, black beans, and sour cream topped with a pineapple mango salsa; Paleo shredded mojo chicken empanadas; and, paleo shredded mojo chicken slaw topped with cilantro and pepitas.
This recipe is SO easy. The hardest part is the empanada dough shaping, honestly, and you don't even have to make those pretty. They taste just as good ugly. I would know, you're looking at 3 of 7 that looked pretty enough to take a picture of!
All I did was make 4.5 pounds of chicken thighs, from frozen, in my Instant Pot and shred it up. You're welcome to do whatever you'd like to make the chicken easy for yourself: poach it on the stove, use left over roast chicken, heck, buy yourself a store rotisserie chicken and go.to.town. It really doesn't matter because we add the mojo sauce AFTER cooking. If you're anything like me though, you likely have some chicken frozen right now and it couldn't be easier to put it in the instant pot with 1 cup of water for 30 minutes and sit and enjoy some coffee while you wait. It's worth noting, cooking from frozen in your Instant Pot takes a little longer for the pot to get up to pressure, because everything is so cold. So factor that into your time line!
Here is the recipe for the basic Mojo Chicken, and then the recipes for three different dishes. I used some store bought salsas here, just from the deli section in my store. If you don't have anything like that available, they are quite basic and a quick google search should yield an easy recipe for you to make from scratch.
