Crab Tower Appetizer {Paleo, gluten-free, grain-free, dairy-free}

If this looks familiar, that's because it is! I posted a video of me assembling this to my Instagram around Christmas time. I love bringing this appetizer to friends' houses around holidays, or whenever! It tastes incredibly fresh, it's quite simple to put together, and it always looks impressive!
I first tasted what I came to know as a, "crab tower" at a restaurant called the Corner Table in Houston. I think it's since closed down, but it was a paleo inspired restaurant that was incredibly delicious. I started trying to recreate it, and while I don't totally remember how it tasted, I think this is just as delicious!
Some assembly tips:
- Make sure you keep the layers separate until ready to assemble and eat
- Leftovers don't really keep... the juices start to run and pool on the plate overnight. Also, I think the crab meat starts to taste funky after 24 hours.
- I think using some type of mold works best; I used a soup bowl from out kitchen, simply packed down the salad, then the avocados, and finally the crab, then inverted it on a serving plate!
- You can also use an english muffin ring or a lid ring from a mason jar, which is how I did it in my instagram video here
