Cauliflower "No-oatmeal" Porridge with Grain-Free Granola

Gather 'round! For the coziest of cozy breakfasts!


Oatmeal has always been one of my favorite meals. It's warm and comforting, and a little bit of cinnamon and sugar always does the soul good. Since going grain-free, it just doesn't feel the same. We make old-fashioned oats for the kids every now and again, and I'll usually test a bite to see if its too hot (Brant literally can't even eat a bite of grains without having a flare up, so this is my job!) and it just doesn't feel the same anymore. It doesn't feel as good.


However, this cauliflower breakfast porridge gives all the nostalgia of oatmeal that I have been missing! Plus, it's a great way to get vegetables in at breakfast! The coconut milk and a bit of arrowroot starch thicken to form an almost pudding-like consistency, and the maple sugar makes it so delicious. Add my homemade granola and this is a fancy breakfast! I made up two bowls and Brant and I enjoyed it over the weekend while the kids did puzzles on the floor. It was a full 10 minutes of peace, which is a BIG deal when you're talking about tiny humans.
