Triple Chocolate Cookies with Sea Salt {grain, gluten, and refined sugar free}

These triple chocolate cookies are flaked with sea salt and reminiscent of a brownie! These are definitely the kind of cookies that you can share with people who aren't expecting a healthier twist on cookies... no one will no the difference!

The reason these taste SO good, is the three types of chocolate. Have you guys tried the Hu chocolate gems? They are a high quality, allergen-friendly chocolate. This means, no soy, no dairy and instead of refined sugar, it uses coconut sugar to sweeten! I am lucky that I can pick up a bag of these gems at my local Whole Foods, but you can also order these directly from Hu's website. I promise you, it's WORTH IT! They also have a line of chocolate bars that are filled with divine things like fruit and cashew butter. Definitely stock up if you are like me and need to have chocolate on hand 24/7 ... for emergencies!


So, I start this recipe out by melting 8 oz of dark chocolate (at least 70% cocoa, this is where I used the Hu gems, the bag is 9oz so I use almost a full bag) with some butter. I melt chocolate in the microwave, doing 30 second blasts at a time, because it is dry and predictable in there. I know a lot of recipes recommend the double boiler method, but honestly it's a lot of trouble for something that could easily go wrong, like the steam creating moisture in the chocolate. I once took a chocolate course and the pastry chef insisted that we use a microwave to melt our chocolate, and I've never strayed from his advice! The worst thing that could happen to your chocolate is adding moisture unintentionally. Also, the microwave is awesome because once the majority of your chocolate is melted you can simply gently stir the remaining chunks and the melted chocolate helps melt the rest. Super easy!


After that, the recipe is straightforward and easy! Simply beating the coconut sugar with the eggs until the granules are dissolved and it looks creamy. Then you will be mixing your flours, combining all three bowls, and finally stirring in your chocolate chips. You will sprinkle your sea salt on immediately after you pull your cookies out of the oven.


These won't last long, but if you want to save them for later keep them in the fridge to keep them fresh! Without lots of refined sugar, these don't keep longer than a day or two on the counter. I also happen to know, having a slightly chilled cookie and a scoop of coconut ice cream is DIVINE.
