Shredded Beets with Lemon Pepper

It's been a bit since I posted a recipe! I have been trying to focus on bringing my cooking creations to YOU, through a local catering company that I launched in November. I've also always wanted to launch a food line, and I had been trying to figure out how to do that as well. It's been quite an adventure and it doesn't seem like a food line is where I should be focused right now. For now I am focusing on being creative here, sharing recipes, and taking on small catering jobs (like the charcuterie boards you all love so much!).
I hope you like this side dish recipe! I have always hated beets. I sometimes eat them just because they're good for you, but it's always a struggle. But, I love this recipe for shredded beets, inspired by a take and bake dish I got from the grocery store (hey, I'll give props where props are due!) I think this recipe would also roast up gorgeously in some type of air fryer/ convection oven! Something about the beets being shredded makes them more palatable to me. They turn out crispier and less "earthy."
Let me know what you think! Even my picky little ones gave these a try!
