Morning Glory Muffins {Paleo, grain-free, gluten-free, dairy-free, no refined sugar!}

We need a quick, easy, nutrition packed muffin for those hectic mornings on here, right?! Something no-fuss, low- sugar, full of fruits and vegetables to offer with a smoothie on those mornings where everyone sleeps in 45 minutes, but you don't set your alarm because 99.9% of the time your kids wake you up at 6 am when their OK-to-wake clock turns color? Did I just describe my morning to you? Yes. Yes. And sometimes, mama "can't even" on mornings where we're all up early. A muffin plus a protein packed smoothie is a perfect breakfast! It's also quite portable! Stuff those kids into their car seat, hand them their breakfast and wave bye-bye as they head off to school! There's almost certainly a mess for you to ignore inside while you sip hot coffee.
Ok, I mixed up this blog with my diary again! Sorry 'bout that ;) Here's the recipe! I hope you make a batch this weekend and head somewhere outdoors. It's supposed to be sunny in Denver, so that's almost certainly what we'll be doing!
Oh. almost forgot! These guys have an almond flour and flax meal base! So even stand alone, they're a nice and balanced muffin! I only add 1/2 cup of coconut sugar to mine, and they're barely sweet. If you like a sweeter muffin you certainly could increase that a little bit, but I like them as I wrote the recipe!
