Kitchen Basic: Marinated Onions

I first found out about marinated onions from Teri Turner's Blog, No Crumbs Left, and now I don't know how I lived without them! I make mine a little different than Teri does, but I still owe her for the introduction.
Marinated onions are a great way to elevate pretty much any dish! I love them on salads, burgers, roasted vegetables; and, even breakfast things like eggs or quiche!
Luckily they are very easy to make up, and even easier to eat! They can sit out on the counter marinating for up to three days, so manage your portions so that nothing goes to waste. It's not recommended to refrigerate marinated onions, as when the oil solidifies the flavors don't develop the same way. Trust! These are amaze-fest-USA.
