Herbed Asparagus and Prosciutto Tart {Paleo, gluten-free, dairy-free, grain-free}

Is Spring springing where you are? It is here. We had a perfect weekend of blue skies, and warm days down in our neighborhood. We took the kids up to the mountain to teach them snowboarding for the first time! I'm partial to skiing on bluebird days, almost exclusively, so we are capitalizing on the end of the season as a time to get the kids to fall in love with the winter sport. We're hopeful that they'll love it so much that next season they will be willing to put up with the cold and lower clarity day. Do you have any experience with this? Did your kids always complain about the crappy days of skiing and snowboarding, or where they gung ho about going whatever the weather? This is coming from a girl who once stayed behind in the parking lot as the rest of my family went and skiied without me because I couldn't deal on a cold and foggy day, haha. Teenagers.


With the incoming Spring season, I've been gearing up for those brunchy holidays. I've got Easter on my radar and created this rosemary pastry with asparagus and prosciutto. It would make any brunch-scape gorgeous, and adds a healthy dose of vegetables! The pastry is an almond flour base, and uses palm shortening to make it dairy-free. I've sprinkled some parmesan on top here, but that's totally optional if you want to keep it 100% dairy-free.


Oh, I almost forgot! Get your kids to help you prep the asparagus! Toddlers just love snapping the woody ends off the asparagus. It's a great exercise for their fine motor skills and they get to see the immediate effects of their helpfulness!
