Hey hey hey recipe lovers!
I love a good theme. So I was looking through my stockpile of completed recipes and when I saw my grain-free pizzas a light bulb went off! What if I made these in cute valentine's hearts for Valentine's Day this weekend?! Self-high five, and off I went.
The "dough" for these paleo pizza crusts is more of a batter, with the consistency of thick pancake batter. You simply smooth it out on a parchment paper, into whatever shape you want, and bake in a 450F oven for 6 minutes. Then you can decorate as you please, and bake under the broiler for a few more minutes until toppings are melted and golden to your liking.
The batter doesn't rise, nor does it spread out. You're creating mini pizza crusts to be used immediately or, you can even freeze them to decorate later! You can also make one big pizza crust if you'd like! I always like making mini pizzas, because everyone can customize!
Speaking of customizing pizza, the consistency of these pizza crusts reminded me of a stand out school lunch of my childhood: the Lunchable! Ooooohhhh baby, you had yourself one of those in elementary school and everyone would be green with envy. However, in retrospect, not the best of ingredients there! So I thought these would be a great idea, check it out:

I mean so friggen cute, right? I don't know how jazzed my kids would be about this, as they have no concept of what a lunchable even is. I don't know if they make them like they used to anymore? But, it's worth a try and so fun to decorate a little pizza at school. The crusts are perfectly cooked through for a lunch box, no additional baking is needed. If you're at home and cooking additional toppings on top, the additional bake time only makes things crispier for you!
What are your V-Day plans this year? Are you going to make it a bit more special than typical years? I think we are. There's so little to look forward to these days, so I try to capitalize on any opportunity to celebrate! Let me know in the comments what your traditions are! I hope these pizzas make the cut for your family this year!
