Creamy Mushroom, Chicken, and Cauli-Rice Casserole

Sometimes a casserole just hits the spot! I love having a casserole in my weekly rotations. However, it is really hard to find a casserole that is free of grains for my husband's allergies. I also like how when things are Paleo, or at very least just grain-free, they often contain much more nutrition and oftentimes many more vegetables!

Take this casserole for example! I took a very common casserole (chicken, rice, and cream of mushroom soup) and put my nutrient dense spin on it! This casserole contains ample protein, cauliflower rice as a base, spinach, a cashew based "cream" of mushroom, and topped with a seasoned nut crumble crunch!
Simply divine!
It has a longer bake time to set, but the end result is so worth it. The leftovers heat up well in the microwave or oven, making it fantastic for dinner one night and lunch leftovers at work! Total casserole benefits, baby.
I am a sucker for cream of mushroom anything. It was always my favorite growing up! My mom used to use it in her tuna casserole, and she also made this beef patty dish where everything was smothered in cream of mushroom soup. I also just used to love it by the bowl full. This cashew cream of mushroom packs a lot more nutrition and is totally grain and dairy free. So wonderful for allergies and diet sensitivities.
