Chicken Curry with Cauliflower Rice- Whole30 Compliant!

Sticking to my promise, I wanted to add another nourishing, filling, and soul-warming dish that sticks to your January diet reset! Even if you're not doing a Whole30 or something else of the like, I imagine you probably want to do some type of personal reset... unless you don't indulge at all over the holidays, and even then I think you'll still like this!

I was reading a little bit on traditional curries, and was a bit surprised to learn that what we call curry isn't really a thing in India. I also learned that most Indian people's kitchens wouldn't have a curry blend in their pantry. However, what we call curry is still delicious and wonderful it just isn't traditionally Indian food. So interesting. I must admit, I am a bit of a perfectionist and that set me feeling nervous about posting this recipe.. "Should I learn what is traditional and make that instead?!" I'm glad I snapped out of it, because nothing beats a bowl of curry like this. You will love this recipe.


In case you haven't made curry before, it can be scary to see the broken sauce at the end. A sign of doneness in curry is when you see a thin layer of oil, and the rest of the sauce is a bit watery.


The best part of curry is that it is naturally full of whole foods, dairy free (well, it uses ghee so if you have a milk protein allergy you will have to use coconut oil which works very well!), and is paleo and whole30 compliant! The only thing you'd need to swap out is the rice to soak up the sauce, which is an easy swap with cauli rice. When I make curry I make cauli rice for Brant and me, and Basmati rice for the kids. When you make your cauliflower rice I find sauteeing it in a frying pan with a little olive oil and salt is the best way to prepare it, whether it's frozen or fresh. I typically buy the frozen cauliflower rice packages from Costco, because it is just so much easier to have those on hand in the freezer!
