Chicken Club Salad with Marinated Onions and Citrus Honey Mustard Dressing

It was high time for a simple, throw together meal on here! I've been having fun sharing some of our favorite classic meals made grain-free, but most often we eat easy stuff that's just protein and vegetables thrown together somehow.


I whipped up this salad super quickly because I had some prepped, shredded chicken in the freezer. I have mentioned before that I typically roast two chickens, spatchcock style, and then shred all the meat to freeze in portions to easily grab throughout the week. Since the shredded chicken is already cooked, it thaws out very quickly in a bowl of cool water. Then I just saute it in some olive oil to bring it to a warm, safe temperature. I like to freeze the chicken, rather than just refrigerate and grab as needed, because it is a fresher flavor and it also an insurance policy against waste in the event I don't get to use all the meat in 4 days. I also use my roasted bones for bone broth! Again, you can freeze those to pull out whenever you're ready to make your broth. Super easy.


So, I thawed and sauted some of my shredded chicken, and added a bit of salt and pepper to it. Then just threw together the rest of the ingredients. I cooked bacon fresh, and always have some hardboiled eggs on hand. I also sliced an avocado to put with. I can't forget about the marinated onions! I had these ready to use, another kitchen basic recipe, and they really elevate the salad. Tangy and spicy, just perfect to offset the eggs and bacon.


The dressing is also a simple blender recipe. It's a great dressing to have on hand for anything, and makes a great marinade for chicken as well! You can whisk it by hand, but making fat and oil smooth by hand isn't a task for the faint of heart! You'll get a sore arm, and maybe even doubt that it will come together at all. But it will... just keep whisking, just keep whisking!


When I get to eat this for lunch, I feel like I'm really rocking this whole mama life. I mean, most often I'm eating avocados wrapped in turkey meat for lunch so this is a MAJOR lunch upgrade.
