Cheesy Gordita Crunchy Stacks

Just in time for New Years Eve, I have a quick appetizer recipe for you! And a fun fact, most of the ingredients for this dish were leftovers from our Taco Tuesday dinner the night before. I probably just solved two problems for you: dinner tonight (tacos) and an appetizer tomorrow (cheesy gordita crunchy stacks). You will look like it's all so effortless for you, this cooking, looking like a goddess, keeping your home immaculate business. Hahaha... If it weren't for you all here, I'm not sure I could check any of those boxes right now! Christmas is a trip and everything at my house is a wreck... let's ignore life responsibilities, make these and indulge for the last time with the excuse, "Oh, it's the holidays!"


First a funny story. Since Brant's been grain-free, he's been begging me to make a grain-free rendition of cheesy gordita crunch tacos from Taco Bell. I've never eaten at Taco Bell. Not because I'm a purist, but because it was never big in Canada growing up. Then as I got older, I heard how it infamously made people feel... not so great! So I avoided it. As a loving joke Brant would say that's the only thing he could cook for dinner. Or, if it was his turn to pick a restaurant he would say he only wanted to go to Taco Bell. Who has the last laugh now though, because now I can refer him to this recipe!

I first made mini tortilla flatbreads from a very simple cassava flour base. I scooped them out by the tablespoon, squished flat, then placed a piece of parchment on top, and did a quick roll over all of them with a rolling pin.

You cook them up exactly like flour tortillas, on a cast iron skillet. Let them get a little toasty, it adds flavor and authenticity!

Oh baby. These look divine! Lay them out on a lined baking sheet and sprinkle with a scant tablespoon of a Monterey jack and cheddar blend. Then pop under the broiler to melt the cheese.

You've done it. That was the hardest part of everything. Now just stack your remaining layers! It will be: soft tortilla, cheese, round tortilla chip, taco meat, sauce (I highly recommend making my homemade sauce included in this recipe!), then shredded lettuce, and a final sprinkling of cheese.
