Breakfast Blitz Day 3: Sheet Pan Eggs Benedict

If you are an eggs benedict purist, you may need to shield your eyes or take a few deep breaths! There is no English muffin here! And I willingly admit, this is a FAUX POACH. I repeat, no water tornados were made here!

These eggs aren't poached in the true sense of the word. I used my instant pot, a silicone egg cup mold, and pressure cooked them with some water. You may choose to poach them in a pot of hot water with a bit of vinegar, as per tradition, but I just figured we could figure out a way to make this easier! There are several options for egg technique here:


1) You can "poach" them in your instant pot/electric pressure cooker (eggs inside silicone egg mold or small mason jars)

2) You can bake them in muffin tins, each muffin tin greased and filled with 1 tbsp water, until desired doneness

3) You could simply crack the eggs over the potato mixture and bacon when there's about 5 minutes left for everything to cook. It would be more of a fried egg/baked egg, but I've done this with breakfast sheet pans before and it's divine.


The hollandaise is also probably sacrilegious- I do a blender hollandaise. Sue me. It's fail proof and honestly, I can't cry over wasted butter any more this year.


There are a few little steps in this recipe, so your final recipe of my Christmas Morning Breakfast Blitz is probably the hardest one. It is still very easy, but definitely a little less "set it and forget it" than the others.
