Almond butter and Jelly Parfait Pops {grain-free, gluten-free, no added sugar, dairy-free option}

I guess I'm on a breakfast kick this week?! Sometimes it is so strange how creativity works! I usually let my inspirations carry me as I create recipes, and sometimes it's balanced across the various meals of the day. But, this week there is A LOT of breakfast ideas floating around on Paleo and Parenting!


I posted on my Instagram stories a few days ago that Norah and I were making yogurt pops for a snack. It turns out they were such a hit that the kids went through them in 24 hours. Normally popsicles are a treat, but when we are making them ourselves I make sure that they are balanced and healthy and let them enjoy.


Some of my favorite ingredients to blend up and pour into my popsicle molds are:

- Full fat coconut milk

- Full fat, Greek yogurt

- Frozen Berries

- Bananas for Sweetness

- Cacao powder for chocolate

- Collagen Powder for protein balance

- Almond Butter

- Peanut Butter


The recipe here is inspired by a classic breakfast parfait: Cherries, almond butter, banana, grain-free granola, banana, and yogurt! It is a wonderful twist on a yogurt parfait breakfast and kids will surely embrace popsicles for breakfast!
